Taco Pie
Ingredients:
1 pound ground turkey, or hamburger
1 can refried beans
1 jar of mild salsa
1 cup or more of shredded cheese
Tortilla chips
 
Spray the inside of a pie plate, or square baking dish with non-stick cooking spray.
Brown the meat.
Add half the salsa to the meat.
Mix the other half of the salsa with the refried beans.
Layer the beans, meat, then cheese.
Stick a few tortilla chips around the edges to look decorative, or over the whole top.
Bake in the oven at 350 degrees for 20 to 30 minutes or until warmed through.
Serve with the rest of the tortilla chips.
This can be easily doubled for bigger families, just use a 9X12 baking dish.

Tortilla Soup
(Makes 4 servings)
Ingredients:
1 teaspoon of Olive Oil
1 cup of chopped onions
2 garlic cloves minced
1 tablespoon of chili powder
1 teaspoon of ground cumin
1 teaspoon of oregano
29 ounces (2 cans) of chicken broth
29 ounces (2 cans) of un-drained, diced tomatoes
1 pound of shredded chicken
1 bay leaf
8 ounces of corn
1/2 green bell pepper diced
tortilla chips (for scooping or crushing and putting into the soup)
Mexican or Cheddar Cheese to sprinkle over the top

In a large sauce pan, heat the olive oil with medium heat. Add the garlic and onion. Let them cook for about 3 minutes or until clear translucent. Add the chili powder, cumin, oregano, chicken broth, tomatoes, chicken, the bay leaf, corn and, bell pepper. Bring to a boil, reduce the heat, and simmer for 45 minutes. Remove from heat and discard the bay leaf. Ladle into bowls. Top with chips and cheese to your liking.

This recipe has been modified but is based on the Tortilla Soup recipe in the book titled Simply Cooking by EdVenture.

Cranberry Chicken
(Makes 2 to 4 servings)
Ingredients:
1.5  to 2 lb any type of chicken you prefer
1 can of whole cranberries
1 packet of Lipton onion soup mix
1 whole onion, if desired

Preheat the oven to 350 degrees
Spray glass baking dish with nonstick cooking spray
Mix onion soup mix and cranberry sauce in bowl
Chop the up onion
Mix the chicken in with the cranberry sauce mixture with onions and pour into the glass baking dish
Bake in oven uncovered for about an hour - if you go a little longer even better

Sausage & Cheese Breakfast Strata
Ingredients:
1 pound of sausage links cooked and cut into bite-sized pieces, drain grease
1 small loaf of Pepperidge Farm sandwich bread, cut into small cubes
6 extra large eggs scrambled and add 2 cups milk
1 8 oz pkg of shredded cheddar cheese
1 med chopped onion if desired
2 tablespoons of butter or margarine

Grease a glass baking pan with the butter make sure to use it all.  Put all combined ingredients in baking dish and leave in refrigerator overnight. Bake in oven, at 350 degrees for 45 minutes to an hour. This is great for Christmas & Easter mornings, when you are busy with other things.

Salad Parmesan
Ingredients:
5 T Parmesan cheese, divided
1/4 c olive oil
2 T fresh lemon juice
1/2 tsp dry mustard
1/2 tsp cracked black pepper
2 cloves garlic, minced
dash salt
10-12 cups torn salad greens (or 2 heads Romain from CostCo pack)
croutons, crumbled goat cheese, broken walnuts, craisins (all optional)
In large salad bowl, combine 3 T Parmesan cheese, olive oil, lemon juice, dry mustard, pepper, garlic, salt. Top with greens. If desired, add optional ingredients. Toss well. Sprinkle with remaining 2 T of Parmesan cheese.

Pancake Recipe
Ingredients:
3 cups of whole wheat flour
1 tsp salt
4 tsp baking powder
1/3 cup olive oil
4 eggs
3 cups milk
Mix together dry ingredients. Add liquids. Stir just until mixed. Fry on hot oiled griddle. To make a lighter pancake you may separate the eggs and whip the egg whites and fold in the batter gently.
